Monggo guisado with alugbati and pork


Monggo guisado is a Filipino Recipe wherein they use monggo beans also known as (mung beans or golden gram) is a seed of Vigna Radiata (scientific name) native to Indian subcontinent. It is mainly cultivated in hot and dry areas here in the Philippines and other regions. It is randomly use as an ingredient in savory and sweet dishes.
Some people like their monggo to have more liquid in it, as long as it is a soup dish.  This recipe will give us excitement in every scoop we take. Let’s try this monggo guisado with Alugbati (Malabar Spinach) and Shrimp.

Ingredients
  • 1 1/2 cups Mung beans
  • 1 tbsp garlic
  • ½ lb pork, thinly sliced
  • 2 Alugbati ( Malabar Spinach)
  • 1 pc medium sized tomato, chopped
  • 1 medium sized onion, chopped
  • 10 to 15 pcs medium sized shrimp (optional)
  • 24 ounces water (for boiling)
  • 1 pc beef cube or 1 teaspoon beef powder (for flavoring)
  • Salt and pepper for extra taste.

Cooking Procedure
·         In a pan, put-in the water and bring to a boil
·         Put-in the mung beans and simmer until it becomes soft. (about 30-50 minutes)
·         On a separate pan, sauté the garlic, onion and tomato.
·         Add the pork. Cook for 3-5 minutes.
·         Put-in the 1pc beef cube. Simmer until the meat is tender.
·         Add the shrimp. Stir and then cook for 2 minutes.
·         Pour the cooked mung beans. Stir and simmer for up to 10 minutes.
·         Add the alugbati ( Malabar Spinach)
·         Sprinkle salt and pepper for an extra taste.
·         Serve hot and Enjoy! 

Number of serving: 4- 6 persons.
