Tasty and delicious dish that can be quickly prepare any time. Mix of potatoes and carrots green peas and other veggie mix. You will surely love this dish also.
Ingredients
- 1 ½ lbs. chicken (cut into serving pieces)
- 1 medium potato (cleaned, peeled and diced)
- ¾ cups green peas (cooked or frozen)
- 2 cups coconut milk
- 1 ¼ tablespoons curry powder
- 2 teaspoons turmeric powder
- 1 ½ teaspoons ginger powder
- 1 medium tomato (chopped)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- a dash of cayenne pepper powder
- 3 tablespoons cooking oil
- Salt to taste
- 1 medium red bell pepper (cleaned, thinly sliced)
- 2 tbsp. chopped spring onions
Cooking Procedure
- In a bowl: Mix the ginger powder, turmeric powder, and. (Mix well)
- Rub the mixture all over the chicken. Set aside (15 minutes)
- Heat the cooking oil in a pot.
- Add: Chicken. Fry all sides of the chicken. Set aside
- On the used pot, sauté the onion, tomato, and garlic in the remaining cooking oil.
- Put the chicken. Cook for 3 minutes.
- Pour-in the coconut milk. Bring to a boil.
- Add: Curry powder. Cover and simmer for 25.
- Add a dash of cayenne pepper, potato. Cook for 10 minutes. Stir
- Add the green peas and bell pepper. Cook for 5 minutes.
- Add salt to taste. Stir.
- Sprinkle with spring onions. Transfer to a serving plate.
