Chicken Salad with Grapes and Cashew Nuts

This salad recipe is another kind of chicken salad, together with the blend of cashew nuts, corns and flavorful grapes. This salad recipe is kinda flavorful one. More exciting taste in every bite. Enjoy!






Ingredients:
·         5 cups Mayonnaise
·         2 cups potatoes (cooked & diced)
·         1 cup seedless grapes (sliced lengthwise)
·         1 cup kernel corn (drained)
·         ½ cup salted cashew
·         2 cups chicken cubed (cooked)
·         1 cup pickle relish
·         Pinch of salt, Ground Pepper, sugar ( to taste)
·         1 medium size onion (chopped)

Cooking Procedure:
·         In a large bowl. Mix all ingredients.

Serve and enjoy!

Chicken Salad


Chicken Salad is composed of chopped chicken meat. Either arranged on a plate or tossed and served with a moist dressing. Usually fresh ingredients. Like green colored vegetables.

Ingredients:
·         4-5 cups Mayonnaise
·         1 k potatoes (cooked & diced)
·         ½ k carrots(cooked)
·         ¼ sweet peas
·         1 cup pineapple tidbits (drained)
·         2 cup chicken cubed (cooked)
·         1 pickle relish
·         Pinch of salt, Ground Pepper, sugar ( to taste)
·         1 medium size onion (chopped)

Cooking Procedure:
·         In a bowl. Mix all ingredients.

Serve and enjoy!

Banana Cream Pie


A very delicious pie stuffed with soft luscious cream. Molded in a very crispy pie crust and a whole bunch of bananas. Put in a fridge for about 30 minutes and there you a sumptuous cream filled banana pudding molded in a thick crispy crust.

 
Ingredients:

1½ milk
1/4 cup sugar
6 tbsp. flour
2 slightly beaten egg yolks
1 tbsp. butter
1 tsp. vanilla
3 egg whites
3 bananas sliced

Cooking Procedure:
 Scald milk in a double boiler. Combine sugar, flour and milk until thickens.  Remove mixture from stove. Pour half of the thicken mixture into crust.



Maja Blanca

Known as a coconut pudding. A well known negrense desserts. A food for the young at heart. Usually serve during fiestas, christmas or some parties. This comes in various colors and flavorings. A Native dessert or a delicacy to some. 

A white creamy gelatine like bar, that is sprinkled with baked coconuts.


Ingredients
2 coconut, grated
2 cups warm water
1/2 cup corn starch
1/2 cup sugar
1/2 cup water
1 can cream of sweet corn
1 whole butter
1 nestle cream
1 can evaporated milk

Cooking Procedure:
Boil coconut milk with sugar, constantly stirring until thick. Add butter, & cream style corn. Pour into a pyrex. Put in a fridge and let it settle down until firm. Serve with bake coconut sprinkles or locally known as "Latik", slice pineapples or nuts.

Mango Charlotte


A fascinating dessert. Mango Charlotte is a wall of smooth "Broas" or what you call lady fingers. The Broas is wrap around to form a wall with deep custard sauce poured in.

Ingredients:
24 Lady fingers or "Broas"
2 ripe mangoes, sliced thinly
30g raisins
3 cherries


Custard Sauce:
2 can evaporated milk
1 cup sugar
4 eggs
1 tbsp. yellow food coloring
1 tbsp. vanilla:

Procedure:

Line the base of a rectangular baking dish measuring about 11x7x1½ with lady fingers. Arrange thinly sliced mangoes a top lady fingers. And over with custard sauce. Decorate w/ Slice cherries and raisins. Chill Before Serving. 


*Custard Sauce: Cook all ingredients in a sauce pan over low flare until mixture thickens.
