Is one of the delicious Filipino noodle
dishes, simply called “Pancit”. Often
served during birthday celebrations or in any special occasion for noodles
symbolizes long-life. It is simply delicious and extremely flavorful one. Taste
of noodles and other fresh ingredients that make this dish more attractive.
Ingredients:
2 tbsp. vegetable oil
1 Medium sized onion (chopped)
3 cloves garlic (crushed)
1 lb. Pork shoulder (sliced thinly)
½ kg. Chicken breast (deboned and sliced
thinly)
½ lb. shrimp, peeled
2 tbsp. soy sauce
2 cups chicken broth
1 cup cabbage (shredded)
1 cup snow peas
2 medium sized carrots (julienned)
½ cup dried black mushrooms
3 tbsp. spring onions (chopped)
1 pack Pancit noodles (Chinese wheat
noodles)
1/4 tsp. freshly ground black pepper
1 tbsp. Soy sauce
2 pcs. Calamansi (cut into wedges)
Cooking Procedure:
Soak mushrooms in warm water, and then
cut into strips. (Discarding the tough stems, set aside)
In a large wok, heat oil over medium
heat, then sauté garlic and onion until tender.
Add: Pork, chicken and shrimp. (Until
golden brown)
Add: soy sauce chicken broth then stir. And
bring to a boil.
Put
carrots and mushrooms. Cook until vegetables are tender. (3-5 minutes)
Add:
Snow peas, cabbage and noodles. (Mix
gently to prevent from breaking)
Cook
until the liquid is absorbed and noodles are done (8 minutes)
Then
remove from heat. Sprinkle with black pepper and spring onions. And transfer on
a large serving plate.
Garnish
with Calamansi wedges.
