Chicken Kaldereta

Kaldereta Dish is literally composed of pork or chicken meat, with a blend of tomato sauce and fresh cuts of potatoes. This dish is another kind of experiment, now that it is composed of chicken meat and another healthy ingredient. This dish is basically base on Filipino style cooking experience and it is also a friendly budget dish for you to serve.


Ingredients:
3/4 kilo chicken (cut into serving pieces)
4 tbsp. vinegar
½ cup soy sauce
2 cloves garlic (minced)
1 medium sized onion (chopped)
500 grams tomato sauce
1 small sized can liver spread
2 medium-sized potatoes (cleaned, cut into cubes)
1/2 cup cheddar cheese (grated)
3 tbsp. cooking oil
½ cup cooked green peas
Salt and pepper to taste
1 medium-sized carrot (cleaned, cut into cubes)
1 medium size green bell pepper chopped (sliced lengthwise)
1 medium size red bell pepper chopped (sliced lengthwise)

Cooking Procedure:
In a bowl, marinate chicken in soy sauce, vinegar, salt and pepper. (25 minutes)
In wok heat oil then fry potatoes and carrots until golden brown. Drain then set aside.
In a pan, heat oil then sauté garlic and onions, add chicken and continue stirring until golden brown.
Pour marinade sauce, tomato sauce and water then simmer for 3 minutes.
Add liver spread, potatoes, carrots, chili and bell pepper then cook for another 2 minutes.
Season according to your taste then add grated cheese and green peas. Then mix until cheese has melted.
Remove from heat; transfer it to the serving plate. Then serve.

Steak Adobo

Another suiting experience composed of beef tenderloin and another kind of Adobo dish. Most likely Filipino people love to eat Adobo for its delicious sauce and it is very suitable dish together with the steamed rice. The best part to use in cooking Steak Adobo is the tender part of the meat.




Ingredients
1½ lbs. Beef tenderloin (strips cut)
1/3 cup soy sauce
4 tbsp. red wine vinegar
½ cup water
2 tbsp. honey
1 green bell pepper (sliced lengthwise)
1 yellow bell pepper (sliced lengthwise)
1 red bell pepper (sliced lengthwise)
1 medium onion (chopped)
3 cloves garlic (minced)
4 tbsp. Olive oil
Salt and pepper to taste
½ tbsp. Spring onion (chopped)
3-5 cups water

Cooking Procedure
Heat a cooking pot then pour-in 2 tablespoons of olive oil.
Add-in the beef and cook for 2 minutes.
Pour-in soy sauce and water then boil. Simmer for up to 20 minutes. 
Put-in the honey and red wine vinegar. Stir and simmer for 10 minutes. Turn-off the heat, set aside.
Heat a wok and pour-in remaining olive oil.
Add in the garlic. Then put-in the bell peppers and onions cook for 3 minutes.
Add the cooked beef, sprinkle salt and pepper then stir. Cook for another 2 minutes.
Transfer to a serving plate sprinkle with spring onions then serve.

Sauteed Bok Choy

Is a vegetable dish that is composed of Bok Choy or “Pechay” together with the shrimp bits and carrots, which could surely give a healthy delightful dish for everyone.





Ingredients
10 pcs. Medium shrimp (cleaned and deveined)
5 bunches Bok Choy (pechay slice halves)
1 medium tomato (diced)
1 tsp. Garlic (minced)
1 ½ tbsp. Oyster sauce
1 medium white onion (sliced)
Salt and pepper to taste
1 medium size bell pepper (cut into strips)
1 medium size green bell pepper (cut into strips)
2 tablespoons cooking oil
1 tsp. Fried garlic

Instructions

Heat the oil in a pan.
Saute the garlic and onions for up to 2 minutes.
Add the tomato. Cook until soften.
Put-in the shrimp and oyster sauce. Cook for 5 minutes.
Add the Bok Choy, bell peppers then stir. Cover and cook for up to 5 minutes.
Add salt and pepper to taste.
Transfer to a serving plate. Then Sprinkle it with fried garlic. Then Serve.

Chicken Stir Fry

Another stir fry dish but simply composed by chicken cubes and other healthy vegetables. It is very simple to cook and it is also an additional dish for your dinner routine.






Ingredients
§  1 ½  lbs. boneless chicken breasts (sliced into cubes)
§  1 medium onion (chopped)
§  1 tsp. garlic (minced)
§  1 medium green bell pepper (sliced into strips)
§  1 medium red bell pepper (sliced into strips)
§  2 tsp. lemon juice
§  ¼ tsp. sesame oil
§  2 tbsp.  soy sauce
§  2 tbsp. oyster sauce
§  1 tsp. ground black pepper
§  1 tsp. salt
§  3 tbsp. cooking oil
§  1 cup snow peas
§  2 medium size carrots (peeled and julienned)

Cooking Procedure
1.      In a bowl, combine chicken, soy sauce, and lemon juice. Mix well (Marinate for 1 hour)
2.      Heat cooking oil in a wok, and then sauté garlic, and onion.
3.      Add the marinated chicken, and then stir for 3 to 5 minutes.
4.      Put-in the salt, ground black pepper, and oyster sauce and sesame oil and continue to stir fry.
5.      Add red and green bell pepper, snow peas and carrots cook for up to 4 to 5 minutes.
6.      Turn off heat. Transfer to a serving plate.

Misua Soup

Another exciting dish composed of sardine’s mix with misua and beaten egg. Best served during rainy season, and dinner time it is very easy to cook and affordable one. Budget friendly meals, share it with your family and friends and served it together with a slice of bread. 





Ingredients
4 ounces Misua noodles
15 ounce canned sardines in tomato sauce
1 raw egg (beaten)
1 medium patola (peeled and thinly sliced)
½ cup spring onions (chopped)
2 to 3 cloves of garlic (crushed)
1 medium onion (diced)
Salt and pepper to taste
3 tbsp. cooking oil
5 to 6 cups water

Cooking Procedure

1.       Heat the cooking oil in a soup pot.
2.      Saute the garlic until golden brown. Set aside the garlic alone.
3.      On the same pot, add-in onions.
4.       Pour-in the sardines in tomato sauce. Stir for up to 2 minutes.
5.       Pour-in the water. Let boil. Simmer for 3 to 5 minutes.
6.      Add-in the misua and patola. Gently stir. Cook for 2 minutes.
7.       Add: the egg. Gently stir. Then add salt and pepper to taste.
8.      Transfer to a serving bowl.
9.      Sprinkle each bowl you serve, with fried garlic and spring onions.

Beef Pochero

Beef Pochero is a Filipino Stew similar to “Beef Nilaga“. This dish is composed of the sweetness of the saba banana, and also together with the sour blend of the tomato sauce. Attractive dish that is worth craving for; Beef Pochero carries another delightful taste and it is best served together with the steamed rice.



Ingredients
§  2 lbs. beef sirloin (cubed)
§  ½ cabbage (quartered)
§  1 bundle green beans (cut into 5 inches)
§  1 medium sized potato (cubed)
§  1 bunch Bok Choy (Pechay)
§  2 large plantains(saba banana) (sliced)
§  1 large tomato (diced)
§  1 medium sized onion ( chopped)
§  2 tbsp. whole pepper corn
§  2 tbsp. soy sauce
§  1 tsp. garlic (minced)
§  1 pouch small tomato sauce
§  1 cup garbanzos
§  1 cup cooking oil


Cooking Procedure
1.      Heat oil in the pot and fry the banana until color turns golden brown. Once done, set the bananas aside
2.      On the same pan, sauté the garlic, onion, and tomato.
3.      Add the beef and cook for up to 5 minutes
4.      Add the fish sauce, tomato sauce, and whole pepper corn and mix well.
5.      Add water and simmer until meat is tender (about 35 minutes )
6.      Put in fried banana, potato, and garbanzos and simmer for 7 minutes.
7.      Add the cabbage, green beans and simmer for up to 5 minutes.
8.      Add the bok choy and turn off the heat. Cover the pot for 5 minutes to cook the bokchoy
9.       Serve hot.

Spicy Shrimp Stir Fry

Another savor dish of shrimp with a delightful aroma and a strong blend of sweet and spicy sauces top with fried garlic and best served with steamed rice.  This kind of dish is commonly served during lunch break or during summer season.


Ingredients
§  1 lb. Fresh shrimp (medium size, cleaned)
§  1 ½  tsp. garlic  (minced)
§  3 tsp. ginger (minced)
§  1 tbsp. sugar
§  2 tsp. soy sauce
§  2 tbsp. tomato ketchup
§  2 tsp. red chili (chopped)
§  1 tbsp. vegetable oil
§  2 tablespoons scallion (chopped)
§  1 tsp. fried garlic
§  Salt and pepper to taste

Cooking Procedure
1.      In a large bowl. Combine soy sauce, ketchup, and sugar. Mix well and set aside.
2.     Heat oil in a pan.
3.     Add ginger and garlic. Cook until light brown.
4.     Put-in the shrimp and stir for up to 2 minutes.
5.     Pour-in the ketchup mixture, scallions, and chili. Stir 5 minutes.
6.     Add salt and pepper.
7.     Transfer to a large serving plate. And sprinkle with fried garlic then serve.

Fried Bangus


Simplest recipe but with an extraordinary taste if you really work hard in making its marinade sauce it will have a sour spicy flavor. Together with the match of spices and vinegar it will bring the flavor of Bangus (milkfish) more exciting and it really enhance the flavor especially when it comes to the belly part.


Ingredients:
1 large boneless Bangus (milkfish) (scales removed, cleaned and butterflied)
½ cup vinegar
4 cloves garlic (crushed)
½ tsp. whole peppercorn
½ tsp.  salt
¼ tsp. Ground black pepper
1 medium sized lemon (cut halves) (half part of it will be use in marinating milkfish)
1 cup cooking oil

Cooking Procedure:
Combine vinegar, garlic, whole peppercorn, salt, and pepper in a bowl, squish the half part of lemon then Stir.
In a deep wide plate, pour-in the mixture and then lay down the fish in a manner that the sliced part is facing down (skin should face up). Cover and place in the fridge. (Marinate 10 hours)
Heat the cooking oil in a pan. Fry both sides of the Bangus in medium heat until the color turns brown.
 Note: Cover the pan, but make sure to cook each side very well. Transfer it on plate. Serve it together with spiced vinegar.

Fried Mussels

Fried Mussels
It is also one of the delicious Filipino appetizer dishes, best served during occasion or “bonding time” together with your friends. Best partner of this appetizer is cool beverages, dip with sour and spicy sauce this could give the mussels a different flavor.

Ingredients:
1 lb. mussel meat (meat removed from the shell)
1 cup water
1 ¼ cup flour
¼ cup cornstarch
2 eggs
1 tsp. garlic powder
1 tsp.  ground black pepper
3 tsp.  Salt
3 cups cooking oil

DIP (Optional): Mix together in a bowl.
Vinegar
Red chilis (minced)
Salt and pepper to taste
Small sized onion (minced)

Cooking Procedure:
In a large bowl, Sprinkle the salt and ground black pepper on the mussel meat. Mix well and set aside. (25 minutes)
Making a batter, in a large mixing bowl combine flour, cornstarch, eggs, water, garlic powder, and sprinkle some salt and pepper. Mix well until it becomes soft.
Heat the oil in a deep cooking pot.
Dip the mussel meat in the batter and then dredge in the remaining flour. (It will prevent the mussels in sticking together)
Deep fry the coated mussel meat in a medium heat until it turns golden brown.
Serve it together with the spicy sauce.

Onion Rings

Onion Rings
It is one of the delicious side dishes or appetizer for Filipino. Mostly served during dinner time, and also “bonding time" together with your friends. Another kind of onion recipe, dip in a delicious mayo dip and it can be a good replacement for French fries.


Ingredients:
2 pcs. Large White Onions (sliced ¾ inch thick rings)
1 cup flour
1 pc. Egg, beaten
1 cup breadcrumbs
1 tbsp. ground black pepper
3 cups cooking oil

Dip:
½ cup mayonnaise
2 tbsp. honey
2 tbsp. mustard
1 tsp. garlic (minced)
Salt and pepper to taste

Cooking Procedures:
DIP Onion Slices separately in a flour, then in egg, and lastly, coat with breadcrumbs. (Set aside, then repeat it to other rings)
In a large deep skillet heat oil then DEEP-FRY breaded Onions (Until brown and crisp)
Drain then set aside.

For the Dip: COMBINE mayonnaise, garlic and other dip ingredients, mix until smooth.
On a large plate arrange the fried onion rings together with the dip. Then Serve.
