Chicken Ampalaya



Is another quick and easy dish made good for lunch and also for your dinner, together with your loved ones and friends.  Good also for vegetables lover and at the same time meat lover. This will suit in your appetite and can fully satisfy your needs. Enjoy!



Ingredients
  • 1 lb. boneless chicken breast (sliced into thin strips)
  • 2 medium Ampalaya (cored and sliced diagonally)
  • 1 small (minced)
  • 4 cloves garlic (chopped)
  • 2 small tomatoes (sliced)
  • 3 tablespoons oyster sauce
  • 1/2 cup water
  • Salt and pepper to taste
  • 2 tbsp. cooking oil
Cooking Procedure

Heat the cooking oil in pan.
Sauté the onion and garlic. Until the onion becomes soft.
Add: Chicken breast. Cook for 2 to 3 minutes
Add: Oyster sauce. For up to 3 minutes.
Pour-in water. Simmer. Cover for up to15 minutes
Add: Ampalaya. Stir and cook (medium heat for 5 minutes)).
Add salt and pepper to taste.
Transfer to a serving plate.

Serve and Enjoy.

Tinolang Manok



Tinolang Manok is an authentic Filipino dish. A traditional Filipino dish, best served with green papayas and hot pepper leaves. For a better taste, try cooking it using low heat to bring out the natural flavor. This dish is best served when it’s rainy season or even if for breakfast, lunch or dinner you’ll surely enjoy it.

Ingredients

1 whole chicken (cut into serving pieces, cleaned)
1 small sized green papaya (peeled, cleaned) (cut into wedges)
1 tbsp. garlic (minced)
6 cups of water
1 medium sized onion (chopped)
1 small sized ginger (peeled, cleaned) (strip cuts)
2 pcs. Green chilis (Siling Pahaba)
2 tbsp. soy sauce
Salt and Pepper to taste
Hot pepper leaves

Cooking Procedure:

Heat the cooking oil in a cooking pot.
Saute the garlic, onion and ginger.
Add: Chicken and cook for up to 5 minutes or until color turns brown.
Add: Soy sauce and mix well.
Pour in the water and put to a boil. Simmer for 40 minutes.
Add: Papaya and green chilis. Simmer for 5 minutes.
Add: Hot pepper leaves.
Transfer to a serving bowl.


Serve and Enjoy.

Sauteed String Beans

This dish is commonly known as “ginisang sitaw” a healthy and delicious dish. This recipe involves string beans or locally known as “sitaw”. It is commonly prepared together with the chicken; aside from chicken this can be also prepared using ground pork or “giniling na baboy”.


Ingredients
  • 4 cups string beans cut about  (2 inch length)
  • 1/4 lb. boneless chicken breast ( sliced into thin strips )
  • 10-15 medium sized shrimps (skinless, cleaned)
  • 2 cloves garlic (minced)
  • 2 medium tomatoes (chopped)
  • 2 tablespoons soy sauce
  • 1 ½ tablespoon oyster sauce
  • ½ cup water
  • 1 medium onion (chopped)
  • Salt and pepper to taste
  • 3 tablespoons cooking oil

Cooking Procedure
  1. Heat the cooking oil in a pan.
  2. Sauté the garlic and onion.
  3. Add: Chicken. Cook for 3 minutes.
  4. Add: Shrimp. Cook for another 3 minutes.
  5. Put-in the soy sauce, oyster sauce, and water. Stir and simmer until the water evaporates.
  6. Add: String beans. Stir for up to 5 minutes.
  7. Add salt and pepper to taste.
  8. Add: tomatoes and stir for 1-2 minutes.
  9. Transfer to a serving plate.

Chicken Adobo

Is one of the well-known Filipino dishes. Absolutely delicious and also “pampagana” recipe of Filipino people. Better try cooking this and share it with your, family, neighbors and friends.  This dish is composed of stewing chicken together in vinegar and soy sauce; you will surely love this dish.

Ingredients
2 lbs chicken, (cut into serving pieces)
3 pcs. dried bay leaves (laurel)
4 tbsp soy sauce
2 tbsp vinegar
3 cloves garlic, crushed
2 cups water
¼ cup cooking oil
½ tbsp white sugar
2 pcs .Green or Red Chilis (Siling Pahaba) (sliced diagonally)
Salt and whole peppercorn


Cooking Procedure


In a large container, combine the soy sauce and garlic then marinade the chicken for at least 3 hours
Drain the chicken and reserve the sauce. Set aside.
In a large pan, heat oil and fry the marinated chicken (cook all sides) for up to 3 minutes or until golden brown. 
Pour-in the remaining marinade.  Then add water. Bring to a boil.
Add the dried bay leaves and whole peppercorn. Simmer until the chicken is tender.
Add vinegar. Cook for another 10 minutes.
Add:  sugar, green chilis and salt. Stir and remove from heat and transfer to a serving bowl.


Serve and enjoy.

Sinigang na Bangus



 Sinigang na Bangus is a traditional Filipino dish. Main ingredient of this dish is milkfish, literally known as “Bangus”. This Sinigang na Bangus dish is sour as tamarind one. You can truly feel the taste of tamarind in every scoop you take. Enjoy! 


 
Ingredients:
·         1 bunch of Cassava leaves
·         1 lbs milkfish (cleaned and sliced)
·         1 pack of Tamarind seasoning mix (about 40 grams)
·         2 small size tomatoes (quartered)
·         1 medium size onion (sliced)
·         6 cups of water
·         2 pcs. Green chilis ( siling pahaba)
·         2 tbsp. cooking oil

Cooking Procedure:
·         Heat the pan with a bit of oil over a medium heat.
·         Add: the onions sauté for about 2 minutes.
·         Pour in the water. Bring to a boil.
·         Add the tamarind seasoning mix. Cook for 5 minutes.
·         Put the green chilis and milk fish.  Cook for 15 -20 minutes in low heat.
·         Add the cassava leaves and turn off the heat. Cover and let the heat cook the leaves.
·         Transfer to a serving bowl.
