Ginataang Salmon (Salmon Cooked in Coconut Cream/Milk)

Ginataang Salmon or Salmon Cooked in Coconut Cream (or coconut milk) is a simple Filipino fish recipe. This dish is very quick and easy to cook. If you love paksiw na isda and ginataang tilapia, you'll surely love this one too!



Ingredients

  • 1 1/2 lbs. salmon (steak cut)
  • 2 cups coconut cream (kakang gata)
  • 3 cloves crushed garlic
  • 1 tablespoon minced ginger
  • 3 pieces long green chili
  • 3 pieces red Thai chili
  • 1 medium yellow onion, sliced
  • 1/4 cup cane vinegar
  • 1 tablespoon fish sauce
  • 1/4 teaspoon ground black pepper
  • 1/2 cup water

Cooking Procedure

  1. Arrange the salmon slices flat in a pan.
  2. Put-in the red and green chillies, garlic, ginger, onion, ground black pepper, fish sauce and water.
  3. Turn-on the heat and let boil.
  4. Pour-in the vinegar. Let it cook for 2 minutes.
  5. Add the coconut cream. Gently stir. cover and bring to a boil. Simmer for 20 minutes or until the liquid reduces to half.
  6. Transfer to a serving plate.
  7. Serve and enjoy! (Good for 3 persons)

Laswa




              One of the most versatile vegetable dish for it can include any vegetable you can find. Most of the ingredients can be easily found in the market or even just in your backyard garden. Laswa is a healthy vegetable soup. What makes Laswa unique from other related vegetable dishes is it has shrimp as one of its ingredients. You'll enjoy eating this dish because it is simple, inexpensive, low in fat, and full of vitamins and   nutrients.


 INGREDIENTS

     • 250 g. fresh shrimp, cleaned with head and shell intact
     • 250 g. squash, diced
     2 pcs eggplant, cut into wedges
     10 pcs okra, cut into wedges
     5 pcs string beans, cut into 2 inches
     1/2 medium sized patola, sliced
     1 bunch saluyot
     8-10 cups water
     Salt


COOKING PROCEDURES 

  • Boil water
  • Add fresh shrimps
  • When shrimps turn pinkish, add squash and okra and simmer for 2-5 minutes
  • Add string beans and eggplant, simmer for 2 minutes
  • Add patola, simmer for 1 minute
  • Season with salt to taste
  • Turn off heat and add the saluyot
  • Serve. (Good for 8 persons)

Kilawing Puso ng Saging

 is a Filipino recipe which involves banana blossoms, that is very healthy and delicious at the same time. Also considered as a vegetables dish sautéed with garlic and onion cooked together with the help of vinegar. This dish is very simple and at the same time a friendly budget dish, can be cook whenever you want.






Ingredients:

·   2 to 3 cups chopped banana blossoms
·   1 tsp. garlic (minced)
·   1 medium onion (sliced)
·   6 tbsp.  vinegar
·   3 pieces long green chili pepper (sliced)
·   2 tbsp. fish sauce
·   ¼ tsp. ground black pepper
·   6 cups of water (with 5 tbsp. salt)
·   2 tbsp. cooking oil
         

Cooking Procedure:

1.       Soak the chopped banana blossoms in the bowl with 6 cups of water with salt in it.  After soaking, squeeze tightly to release the sap from the banana blossoms then drain the water. Set aside.
2.       Heat the cooking oil in a pan.
3.       Sauté the garlic and onion. Add the banana blossoms. Cook for another 3 minutes.
4.       Pour-in the fish sauce then stir and let boil.
5.       Pour-in the vinegar. Then let it boil again, cover, and simmer for 15 minutes.
6.       Add the green chili and ground black pepper. Stir and continue cooking  for up to 5 minutes.
7.       Turn-off the heat and transfer to a serving plate. Then serve.

Chicken Dynamite Lumpia

is another kind of recipe which is very popular nowadays for its uniqueness kind of invention. Together with the long green peppers or so called “siling pahaba” that gives the recipe the spice and another exciting flavor because of the cheese and ground chicken meat inside.








Ingredients
•             1 lb. ground chicken meat
•             1 tsp. garlic powder
•             1 tsp. onion powder
•             ¼ tsp.ground black pepper
•             ½ tsp. salt
•             1 cup bread crumbs
·              10 pcs. Cheese (julienned cut)
•             10 pcs. Long green pepper (finger peppers)
•             Lumpia wrappers
•             2 eggs
•             1 ½ cups cooking oil


Cooking Procedure:

·         In a bowl, combine the ground chicken, garlic powder, onion powder, and 1 piece egg, salt and ground black pepper. Mix well. Set aside.
·         In another plate cut the long green peppers in the center and get all those seeds out of it. Then put the chicken meat mixtures, and 1 piece julienned cut cheese and set aside.
·         Arrange the long green pepper in the middle of the lumpia wrapper. Wrap the pepper
·         Heat the cooking oil in a frying pan. On the other bowl, beat an egg.
·         Dip the wrapped lumpia in beaten egg then roll over the bread crumbs until all side of the wrap is coated well.
·         Gently place each piece of lumpia on the frying pan. Fry in low to medium heat for 5 to 6 minutes per side or until the color of the outer part turns golden brown.
·         Transfer to a plate line with paper towels. This will absorb the oil.
·         Arrange in a serving plate. Then serve, best serve with a vinegar dip.

Orange Chicken

Orange chicken is absolutely delicious together with the combinations of sour taste of orange and vinegar. And also with the sweetness of sugar in the coated mixture of chicken you will surely enjoy every bite you take.



Ingredients:

·         2 lbs boneless chicken (cubed)
·         1 cup sugar
·         2 cups all purpose flour
·         1 raw egg, beaten
·         ¼ tsp. salt
·         ¼ tsp. pepper
·         Cooking oil
·         2 cup water
·         4 tbsp.  orange juice
·         ¼ cup vinegar
·         2 tbsp. soy sauce
·         1-2 pieces red chilis (sling labuyo) (chopped)  
·         1 tsp.  fried garlic
·         1 tbsp onion (chopped)
·         1 tsp. sesame seeds (optional)
·         ½ cup green onions (finely chopped)


Cooking Procedure:

1.    In a container, put-in the flour (set aside 1 tbsp flour) , salt, and ground black pepper then mix well. Then dip the chicken on the beaten egg mixture and place inside the container (where the flour, salt, and pepper are)
2.    Close the container and shake until the chicken is finely coated.
3.    Deep fry the chicken for about 7 minutes then set aside.
4.    In a large cut, put-in the water, soy sauce, vinegar, a 1 tbsp of flour and orange juice then stir well until it is finely diluted.
5.    In a medium size pan, pour in oil then add the onions, and simmer until it’s finely cook.
6.    Add the sugar and simmer for 3 to 5 minutes
7.    Put-in the chilis and the sauce  (diluted orange juice ) then mix well
8.    Add the deep-fried chicken on pan and cook until sauce nearly evaporates
9.    Transfer to a serving plate then sprinkle it with green onions, fried garlic and sesame seeds. Serve hot.

Spicy Ginataang Hipon

is a Filipino Recipe that consists of  shrimps cooked in coconut milk. It is commonly one of the best dishes here in the Philippines. Basically best choice dish that can be serve during dinner time, seafood experience is one of the greatest dish ever.





Ingredients:
1 lb. shrimp (cleaned)
2 cups coconut milk
3-4 pieces long green chili (chopped)
3-4 pieces long red chili (chopped)
1 tablespoon ginger (minced)
1 medium onion (chopped)
3 teaspoons garlic (minced)
1 ½ tbsp. oyster sauce
1 tbsp. Fried garlic
½ tsp. ground black pepper
2 tbsp. cooking oil


Cooking Procedure:

Heat oil in a pan, then sauté onion, ginger, and garlic on the pan.
Add ground black pepper and oyster sauce. Cook for about 30 seconds.
Pour-in coconut milk. Let it the coconut milk evaporates in a medium heat for about 20 minutes or less.
Add-in shrimps. Cook for 5 to 7 minutes.
Add green and red chilies. Cook for another 5 minutes.
Turn-off heat and then transfer to a serving plate. Serve.

Pork Chop in a Mushroom Gravy Sauce

This dish is very simple but with together with a mushroom sauce it will surely bring an exciting dish, tender and very comforting taste. It is a perfect a dish during lunch time and dinner together with your family and friends. Best serve together with a steamed rice and for plating: you can served also a very healthy sidings like mixed veggies.


Ingredients
2 lbs. sliced pork chops
2 cups mushrooms (sliced)
1 piece beef broth / cube
1 cup water
½ tsp. ground black pepper
½ tsp. minced fried garlic
1 tablespoon cornstarch (diluted in cup water)
1 teaspoon salt

 Cooking Procedure
1.      In a wok, fry pork chop sliced meat and fry until tender. Then set aside.
2.      On a large bowl combine, mushrooms, water, beef broth, salt and pepper. (mix well)
3.      On another wok, pour out the combine ingredients then let it boil for a minute or more. Meanwhile, pour in the water cornstarch mixture. And wait until it thickened the sauce. 
(You can add water if necessary).
4.      On a large plate. Place the fried pork chop then pour in the mushroom gravy sauce over the pork chop.
5.      Then sprinkle it with fried garlic on top. Serve with steamed rice.
