Adobong Pusit

Is a tasty squid dish cooked using the popular Filipino adobo method. Squid is first boiled in soy sauce and vinegar then later sautéed in garlic, onions and tomatoes; the texture of the squid becomes rubbery due to over cooking, this brings in an awesome taste experience and rich in flavors that make this dish more exciting.  


Ingredients
o    ½ kilo posit (squid) (wash and cleaned removed membranes, eyes and stomach)
o    ¼ cup water
o    ½ cup vinegar
o    ½ cup soy sauce
o    2 pcs. Dried bay leaves (laurel)
o    ½ tsp. whole peppercorns
o    Salt and sugar to taste
o    5 cloves garlic (minced)
o    2 tbsp. oil
o    1 small onion (sliced)
o    3 green chilis (siling pahaba) (sliced diagonally – optional )
o    2 tomatoes (sliced)


Cooking Procedures:

1.      In a saucepan, boil pusit (squid) in water, vinegar, peppercorns, salt.
2.      Cover and cook until tender. Drain and set aside. Reserve sauce.
3.      In a separate pan, sauté garlic in hot oil. Add onions and tomatoes, cook until medium brown.
4.      Add pusit (squid) and let simmer for 5 minutes.
5.      Add reserved sauce, soy sauce, green chilis, bay leaves and a little sugar to taste.
6.      Simmer until sauce is reduced.
7.      Remove from heat and serve with steamed rice.


Serve and Enjoy.
